Driftless Sheep Cheese from Hidden Springs Creamery

Hidden Springs Creamery is a sustainable sheep dairy located in the lovely driftless region of southwest Wisconsin. This creamery employs traditional farming methods, using Percheron draft horses to plow their fields and donkeys to protect their flock from predators. Utilizing cooperative farming principles alongside their Amish neighbors, Brenda and Dean Jensen pasture their sheep on sweet, lush grass.

This superior quality definitely comes through in the taste of their cheeses. The creamery's brand, Driftless Sheep Cheese, is named after the unglaciated part of Wisconsin where their farm is located. This deliciously creamy, fresh sheep's milk spread comes in several flavors. Currently we carry the Basil and Olive Oil, Honey and Lavender, and Natural varieties. All three won awards at the 2007 U.S. Cheese Championship, and, after one bite, you'll know why! Creamy, tangy with a sweet, full finish, try Driftless slathered on baguette alongside fresh fruit paired with your favorite white wine. Please note that this comes to us once a month in small quantities due to its delicious but fragile nature, so enjoy it while you can.
