Commissary Cook - Deli
PURPOSE: Prepare an abundance of the highest-quality Deli, Bakery and catering dishes. Maintain a level of cleanliness exceeding health department standards. Maintain strong communication throughout the department. Exercise independent judgment regarding tasks and work- flow. Help introduce new products on a regular basis as well as rotate current recipes.
Reports to: Deli Management
Prepare various Deli and Bakery foods indicated on daily production lists in a speedy and accurate manner, ensuring enough product to keep Deli cases full.
Create consistent dishes and follow Co-op recipes.
Record all kitchen losses and production in the assigned place.
Record all kitchen equipment and supply needs to Deli Management.
Record transfers from other departments in the assigned area.
Work closely with other department staff and ensure good intradepartmental communication by writing pertinent information in department logbook for staff that is not currently working.
Assist with dishwashing as needed.
Assist with daily cleaning tasks as assigned.
Work in a safe manner, following safety rules and procedures.
Assist with inventory as assigned.
Alert Deli Management about low stock of basic ingredients and supplies.
Perform other tasks as assigned by Deli Management.*

Knowledge/Skills/Abilities: Experience: Years
Food Knowledge Preferred interest in natural foods and previous experience with food service. 2-3
Cooking At a restaurant, catering business, deli or other food service establishment. 2-3
Serving the Public In a restaurant or other food service establishment. 1-2
Customer Service Maintaining a positive attitude towards customers and co-workers in a retail or food service environment. 1-2
Multitasking Demonstrated ability to handle multiple demands, maintaining speed and accuracy. 1-2
Repeated bending and moving (up to 60 lbs.)
Ability to both remain stationary and move about for an 8-hour shift
Frequent twisting and reaching
Manual dexterity, including simple grip and use of electric and kitchen equipment
Must be 18
Ascending and descending ladders*
Exposure to temperature extremes
Exposure to cleaning solutions
Exposure to knives and other sharp equipment
