Touted by some as the "new quinoa". Freekeh brand greenwheat is a roasted, cracked, green wheat hailing from Australia. Like quinoa it cooks quickly and can be used in an endlessly diverse range of hot and cold dishes. According to the producer, Freekeh; because the grain is young it is more nutrient dense than grains that are left to mature before harvesting. It has a low glycemic index, is low in carbs, has up to four times the fiber of brown rice, and is rich in prebiotic properties.

Basic Recipe
To use freekeh as a side dish, like rice or pasta:
Place 5 cups cold water, 2 cups freekeh, 1 tsp. salt, and 1 tbs. olive oil (optional) in a large saucepan. Bring to boil, stirring occasionally. Cover the saucepan with a tightly fitting lid. Lower heat and simmer for 10-15 minutes if cooking cracked grain. Ensure all water is absorbed and grains are tender before serving.
