I was recently lucky enough to meet Abdelmajid Mahjoub, owner of "Les Moulins Mahjoub," who along with Scott Pikovsky of Great Ciao Foods, offers a line of imported Tunisian products. I was struck by Majid's passion for his products and his understanding of earth, air, fire (sun), and water as partners in his business. But what really sold me on his products was how he spoke of the olive pit as the "heart" of the olive. In his country, that's how they refer to it; you will never see an olive without a pit served by Majid. His line is created with great respect for and gratitude to the earth, the sun, and the sky — his partners in the creation of beautiful food.
