Fresh Local Seafood Year Round

The Wedge Meat and Seafood Department is excited to introduce our first year round fresh catch, local and wild seafood from Lake Superior. In fact, it will be caught to order.

We'll place the order and Lou's Fish House will call the fishing boats to place the order. Lake Trout will be caught and delivered straight to Lou's for processing and delivery as needed. In this case, "processing" means filleting the fish. Lou's bought a specific (and pricey) piece of equipment to remove the pin bone of the trout - a labor intensive process when done by hand.

Lake Trout is a fabulous fish that works in all your salmon recipes. Aaron Nytroe, Wedge Meat and Seafood Manager, assures you that if you know how to prepare salmon, you know everything you need to know about preparing Lake Trout.

Look for the fresh Lake Trout starting this week at the Wedge.

It will be on an introductory sale from Wednesday April 27 through Tuesday May 10, 2011. Regularly priced at $7.99/lb, the sale price is $7.49/lb
