Every fall and winter, shoppers turn to Kadejan turkeys for their holiday feasts, and the Wedge is eager to provide them with such quality poultry. "All natural" isn't a phrase we put a whole lot of stock in at the Wedge, but where Pete Thorfinson and family are concerned, we proudly stand behind their claims and high-quality poultry, because we've visited their Glenwood, Minnesota, operation and also the small circle of family farms from whom they buy. We believe in them thoroughly.
One of the many reasons that the The Wedge believes in Kadejan is that they "air-chill" their poultry, that is, they don't immerse it in chlorinated water as most commodity poultry processors do. According to the Food Safety Network, bacteria like salmonella and camphylobacter tend to be significantly lower in poultry that has been chilled in refrigerated air as opposed to immersion chilling. Furthermore, these water baths for immersion-chilling essentially "water log" the turkey and chicken with chlorinated water. Kadejan says, "All our birds are air-chilled, which doesn't add 'water weight' to your food bill!"
Furthermore, Kadejan feeds their poultry whole grains (no fish, bakery, or animal by-products) and allows them to roam free. "Free roaming" means that their turkey and chickens are not allowed outside in bad weather - a necessity in northern Minnesota ("free range" means the animals move freely in all weather). Perhaps most importantly, because they aren't a giant factory-farm, Kadejan's USDA inspector only inspects 6 birds per minute - a far cry from the industry standard of 32 birds per minute. Kadejan says this "greatly increases the safety of the product."
