Golden Potage - Soup
Local, seasonal and delicious! Use Harmony Valley Farms Soup Mix, in the Produce Aisle.
(serves 8-10)
- 1 small onion, chopped
- 2 tsp. Olive Oil
- 8 cloves of garlic, minced
- 1 bag Harmony Valley Soup Mix, chopped into 1" pieces
- 6 cups stock of choice (vegetable, chicken)
- 3/4 c. half and half or soy creamer
- Salt and pepper to taste
- Saute onions in oil
- Add chopped roots and garlic, saute for ten minutes
- Add stock and bring to a simmer
- Simmer until vegetables are tender, approx. 30 min.
- Cool soup a bit, then puree in blender in small batches until smooth
- Whisk in 1/2 & 1/2, adjust seasonings to taste and return soup to a simmer to heat thoroughly before serving.
