Golden Potage - Soup

Local, seasonal and delicious! Use Harmony Valley Farms Soup Mix, in the Produce Aisle.

(serves 8-10)

  • 1 small onion, chopped
  • 2 tsp. Olive Oil
  • 8 cloves of garlic, minced
  • 1 bag Harmony Valley Soup Mix, chopped into 1" pieces
  • 6 cups stock of choice (vegetable, chicken)
  • 3/4 c. half and half or soy creamer
  • Salt and pepper to taste
  1. Saute onions in oil
  2. Add chopped roots and garlic, saute for ten minutes
  3. Add stock and bring to a simmer
  4. Simmer until vegetables are tender, approx. 30 min.
  5. Cool soup a bit, then puree in blender in small batches until smooth
  6. Whisk in 1/2 & 1/2, adjust seasonings to taste and return soup to a simmer to heat thoroughly before serving.
