Mexican Pizza Sticks
Ingredients
- 1 (12-inch) pizza crust
- 1 cup refried beans, thinned with a little water
- 3/4 cup salsa
- 1 cup (4 ounces) shredded pepper jack cheese or nondairy alternative
- 2 tomatoes, thinly sliced
- 1/3 cup sliced ripe olives
- 2 tablespoons chopped fresh cilantro
- 3/4 cup sour cream (nondairy or regular)
Directions
- Heat oven to 425 F. Place crust on a large baking sheet; bake 2 to 3 minutes to prepare crust.
- Remove crust from oven; spread refried beans over crust to within 1 inch of edge. Spoon salsa over beans; sprinkle with 1/2 cup of the cheese.
- Arrange tomato slices in concentric circles over cheese. Sprinkle with remaining 1/2 cup cheese and olives.
- Bake about 10 minutes or until cheese is bubbly.
- Scatter with cilantro. Let stand about 3 minutes before slicing into sticks; serve with sour cream for dipping. Makes 6 servings.
