Mexican Pizza Sticks

  • 1 (12-inch) pizza crust
  • 1 cup refried beans, thinned with a little water
  • 3/4 cup salsa
  • 1 cup (4 ounces) shredded pepper jack cheese or nondairy alternative
  • 2 tomatoes, thinly sliced
  • 1/3 cup sliced ripe olives
  • 2 tablespoons chopped fresh cilantro
  • 3/4 cup sour cream (nondairy or regular)
  1. Heat oven to 425 F. Place crust on a large baking sheet; bake 2 to 3 minutes to prepare crust.
  2. Remove crust from oven; spread refried beans over crust to within 1 inch of edge. Spoon salsa over beans; sprinkle with 1/2 cup of the cheese.
  3. Arrange tomato slices in concentric circles over cheese. Sprinkle with remaining 1/2 cup cheese and olives.
  4. Bake about 10 minutes or until cheese is bubbly.
  5. Scatter with cilantro. Let stand about 3 minutes before slicing into sticks; serve with sour cream for dipping. Makes 6 servings.

Serve this zesty pizza alongside a tossed green salad, and finish the meal with a cone of your favorite ice cream or frozen nondairy dessert.
