Zucchini Pizza with Gouda & Dill
Ingredients
- 1 10-12 inch pre-baked pizza crust, any kind
- 1 T. olive oil OR butter
- 1/2 onion, diced
- 1 medium zucchini, diced
- 8 oz. gouda cheese, grated
- 2 roma tomatoes, diced
- 1 T. fresh dill, minced
Directions
- Warm olive oil in a skillet. Add onions and zucchini with a pinch of salt. Saute for 7-8 minutes, until tender.
- Preheat oven as per directions on pizza crust package.
- Spread half the cheese evenly over pizza crust. Spread cooked vegetables evenly over the cheese.
- Spread the tomatoes evenly on top and then sprinkle on the dill. Top with the remaining cheese.
- Bake 15-20 minutes, as per directions on pizza crust package.
