Zucchini Pizza with Gouda & Dill

  • 1 10-12 inch pre-baked pizza crust, any kind
  • 1 T. olive oil OR butter
  • 1/2 onion, diced
  • 1 medium zucchini, diced
  • 8 oz. gouda cheese, grated
  • 2 roma tomatoes, diced
  • 1 T. fresh dill, minced
  1. Warm olive oil in a skillet. Add onions and zucchini with a pinch of salt. Saute for 7-8 minutes, until tender.
  2. Preheat oven as per directions on pizza crust package.
  3. Spread half the cheese evenly over pizza crust. Spread cooked vegetables evenly over the cheese.
  4. Spread the tomatoes evenly on top and then sprinkle on the dill. Top with the remaining cheese.
  5. Bake 15-20 minutes, as per directions on pizza crust package.

Dill contains volatile oils that are anti-carcinogenic.

Serve with grilled fish or chicken.
