3 ripe Equal Exchange avocados
2 Tablespoons fresh lime juice (about 1/2 a lime)
1/4 cup Wisconsin Growers red onion, diced
1/4 cup cilantro, chopped
1-2 jalapeños, seeded and minced
1/4 teaspoon ground cumin (optional)
1/2 teaspoon salt (or more to taste)
1 cup pomegranate arils
1-2 Harmony Valley Farms organic beauty heart radishes, thinly sliced (optional)
Scoop avocado from skins into a medium mixing bowl. Mash to desired consistency.
Add lime juice and mix well. Stir in red onion, cilantro, jalapeños, cumin, and salt.
Fold in pomegranate arils.
Cut beauty heart radish slices into wedges to use as “chips”
Serve with beauty heart radishes and tortilla chips.
